Soft cheese obtained by processing pasteurised whole milk from farms in the valley of Livigno, located more than 1,800 metres above sea level. The dough is dry and very tasty. It goes well with salads and main courses; when more mature, it can be added as seasoning to sauces and pasta dishes.
