PRODUCT DESCRIPTION

Casera Valtellina is a Protected Designation of Origin cheese, recognised by the EC, a perfect synthesis of the cheese-making history of the valley and fruit of the art of Valtellina cheese-makers.

Its taste is pleasant and delicate in the early months of ageing, becoming more intense after a long period of ageing. Its rind gives off a pleasant milk and dairy smell with a slight hint of green grass.

Casera Valtellina plays a primary role in traditional Valtellina cooking, giving our dishes –whether pizzocheri or sciatt – unmistakable aromas and flavours.

Depending on how long it is left to mature, it can be found Fresh (from 2 to 8 months), Matured (from 8 to 12 months) or Reserve (over 1 year). Cheese left to rest in special ageing cells.
